Meet Our Experienced Chef

Behind the kitchen doors is Chef Hervé, a native of Lyon, the capital of French gastronomy with over four decades of culinary expertise. His journey has taken him through some of the finest restaurants in France and Switzerland, where he refined his techniques and built a reputation for excellence.

Alongside Valérie, his lifelong partner, they’ve opened and managed several restaurants and hotels across France, including one that earned a Michelin star a recognition of their dedication, consistency, and love for the craft.

Their shared passion eventually brought them to Koh Samui in 2015, where they decided to recreate the warm, convivial atmosphere of a French bistro this time with a tropical breeze. Every recipe, every ingredient, and every guest interaction is infused with that same attention to detail and hospitality they’ve upheld throughout their careers.
